Bleached papers are treated with chlorine or calcium carbonate to achieve that bright white colour. Unbleached papers are left in their natural brown state, which means fewer processing chemicals and a taste that's closer to neutral. You'll also notice a slower, more even burn — unbleached sheets don't race down the side of your roll the way some thin whites do.
The trade-off is cosmetic: brown paper doesn't look as tidy as a bright white cone. If that bothers you, it shouldn't — the smoke is what matters.
